I keep seeing banana bread everywhere; what is it about this weather and the urge to have a slice of warm and gooey banana loaf? I usually use a banana bread recipe that contains yoghurt, but yesterday I didn’t have any, but I did have a bunch of ripe bananas that were screaming out to be made! Here’s my alternative recipe if you fancy something a little more gooey and dense, with a salted caramel hit.
Ingredients:
- 140ml oil / 140g butter
- 80g coconut sugar
- 3 eggs
- 70g self raising flour (GF)
- 70g rolled outs
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon powder
- 1/3 teaspoon ginger powder
- 2 mashed ripe bananas
- 1/3 cup chopped dates
Method:
- Preheat the oven to 180 degrees
- Whisk the oil and sugar together
- Add the eggs
- Then add the flour, oats, baking powder, ginger and cinnamon
- Add the mashed bananas and dates
- Transfer the mixture into a mini loaf tin
- Bake for 25 minutes
- Cool and sprinkle some icing sugar – enjoy!
