Banana, date and oat breakfast loaf

I keep seeing banana bread everywhere; what is it about this weather and the urge to have a slice of warm and gooey banana loaf? I usually use a banana bread recipe that contains yoghurt, but yesterday I didn’t have any, but I did have a bunch of ripe bananas that were screaming out to be made! Here’s my alternative recipe if you fancy something a little more gooey and dense, with a salted caramel hit.

Ingredients:

  • 140ml oil / 140g butter
  • 80g coconut sugar
  • 3 eggs
  • 70g self raising flour (GF)
  • 70g rolled outs
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon powder
  • 1/3 teaspoon ginger powder
  • 2 mashed ripe bananas
  • 1/3 cup chopped dates

Method:

  • Preheat the oven to 180 degrees
    Whisk the oil and sugar together
    Add the eggs
    Then add the flour, oats, baking powder, ginger and cinnamon
    Add the mashed bananas and dates
    Transfer the mixture into a mini loaf tin
    Bake for 25 minutes
    Cool and sprinkle some icing sugar – enjoy!
