Who doesn’t love strawberry pie?! Haven’t made pie in years!! Just couldn’t help myself today! Recipe below if you’re into pie (swap for any berry tbh).
Ingredients:
– 2 packets fresh strawberries / 1 packet frozen
– 1 packet shortcrust pastry
– 150g coconut sugar
– 3 tablespoons cornflour
– 1/2 cup water
Method:
– Blitz about 1 cup of the strawberries until puréed
– Add to a pan along with the sugar and water
– Boil, reduce heat and then stir until thickened, allow to cool
– Slice the remaining strawberries – Meanwhile roll out the pastry on a floured surface and place into a glass pie dish (save some to make a lattice design on top)
– Blind bake with some foil on top for 5 minutes at 180 degrees
– Remove foil and bake for a further 3 minutes
– Once the pastry is cool pour the strawberry mix in and decorate into a lattice design using the leftover pastry
– Bake for about 10 minutes or until golden
– Serve with freshly whipped cinnamon cream! (Let me know if you want the recipe!)
