Fool-proof Flapjacks

Who else is fed up of the snow now?! Anything more than 24 hours and I seriously get cabin fever. This week we worked from home, played in the snow, stood in the park for all of ten minutes freezing our toes off, in what has now become the shortest trip to the park ever – and we made flapjacks! So wholesome, so sweet, so darn good!!! These are made with Horlicks because something came over me at that moment in time and I just felt like taking a giant leap back into my childhood (actually it’s Asda’s instant malt, but whatever, yo, live a little!)

Ingredients:

250g rolled oats
3 squeezes golden syrup
75g coconut sugar (I use @naturesheartsuperfoods)
120g melted salted butter
1 teaspoon vanilla
1 teaspoon cinnamon
1 tablespoon instant malt
1/4 cup chocolate chips if you fancy (half side for the kids)

Recipe:

– Preheat the oven to 170 degrees
– Grease a large shallow baking tray (I used a disposable one)
– Mix all ingredients in a large bowl using a wooden spoon *enter over excited children who want to bake*
– Transfer the mix into the tray, packing it tightly
– Bake for 15 mins
– When it comes out it will be soft and squishy, but don’t panic! The sugars will start to solidify and it will set
– After about 15 mins, while it is still a bit soft take a sharp knife and slice into squares (be careful not to be rough with it, so go slow)
– Once cool enjoy with a cuppa or a glass of warm milk – so moreish!
