It’s pancake day! Or as my daughter keeps correcting us; Shrove Tuesday… promptly proceeding to tell us the religious connotations of the day, followed by how that’s actually significant for us (as Muslims, because Jesus is Isa remember) I’m like oooh-kay! Bless! Anyway, I’m not a huge fan of pancakes and tend to make fluffy American ones, but what I love about pancakes is that you can hide virtually anything in them and the kids will lap it up. Chia seeds is a good one to add, they’re packed with omega-3 (brain food) and a great source of fibre, calcium, and iron. Give it a go if you fancy a little healthy boost.
Ingredients:
– 135g gluten free self raising / normal self raising flour
– 135ml almond milk / any milk
– 2 eggs
– 1/2 teaspoon baking powder
– 1/2 teaspoon cinnamon – 1/2 teaspoon vanilla – 2 tablespoons coconut sugar
– 2 tablespoons olive oil
– 2 tablespoons chia seeds
– A pinch of salt
Method:
– Mix the flour, cinnamon, baking powder, sugar, and chia seeds together
– Whisk together the milk, eggs, oil, and vanilla
– Make a well in the dry ingredients and add the wet ingredients
– Leave the batter to rest for 2 minutes
– Spray a flat frying pan with a little and scoop on your pancake batter into rounds; fry for around a minute on each side (until they’re brown)
– Enjoy with a little maple syrup and berries… whatever you fancy really!
