Cheesy Polenta Chips

Nailed it! I tried this a couple of months ago and to be honest they were okay. This time, I swore I’d do better – and I’m glad to say I did! Cheesy polenta chips are the ultimate in healthy comfort food – and they’re soooooo yummy!!! Crispy, fluffy in the middle, TOTALLY better than a potato chip (yes, I just said that) and basically the perfect salty, cheesy snack or side dish for sharing.



1 cup cornmeal
750ml boiled water
1/2 teaspoon salt
1 teaspoon dried chives
A few turns of freshly ground black pepper
2 tablespoons of butter
1 cup grated pecorino cheese


– Line a shallow baking tray with baking paper
– Boil the water in a large pan, add the salt and pepper
– Slowly add the cornmeal and whisk quickly for about 5 minutes until the mixture gets thick and starts to pull away from the sides (if there are lumps you can always sieve it, so don’t worry!)
– Add the chives, cheese, and butter
– Pour the mixture into the baking tray
– Chill in the coldest part of your fridge for at least 1 hour (preferably overnight)
– Once set, cut the polenta into strips
– Pre heat the oven to 250 degrees Celsius
– Spray a baking tray with oil, carefully place the chips on, bake for 20 minutes, turning over half way
– Enjoy with a dip of your choice – loved by both kids and adults!! (P.S. they can absolutely be frozen, but make sure you place them on a tray first, freeze solid, then transfer to a ziplock bag to prevent them from sticking together) Yummmmmm!!!
