Chocolate pot, the healthy way! I love Gu pots, and don’t get me wrong, they’re so yummy but I always feel my skin crawl a bit at the thought of digesting anything with refined sugar nowadays. I decided to make an alternative of the humble chocolate pud – and here it is. It’s light, it’s chocolatey, and it really hits the spot! I’ve gone for Greek yoghurt in this recipe but it’s because that’s all I had in the house today, you can absolutely use coconut or soya, or any other yoghurt you fancy. Ingredients (makes 4)
1/2 cup almonds
6 pitted, soft dates
1 teaspoon honey
1 ripe banana
1 teaspoon coconut oil
1 tablespoon cacao powder
1/2 tub Greek yoghurt (or dairy free alternative)
Pomegranate seeds
Chocolate bar to shave / shavings
Cinnamon to sprinkle
Method:
– Blitz all ingredients, except for the Greek yoghurt in a blender. I liked having bits in my chocolate cream so I only blended it for 1 minute, but if you want it smooth, grind the almonds first and then add the other ingredients.
– Scoop the mixture into 4 short glasses or ramkins
– Top with 2 tablespoons of yoghurt in each
– Decorate with pomegranate seeds, chocolate shavings, and cinnamon
– Enjoy!
