The great thing about Ramadan is receiving all those lovely fruit baskets – overloaded with fruit at the mo, but I ain’t complaining – had about 12 ripe bananas this morning, and with a fasting household those weren’t going to go down anyone’s tummy, fast. Sooo, what’s the solution?
Freeze ’em.
That’s right, chop them right up, place them on a sheet pan, bung them in the freezer and then bag those babies up.
They’re perfect in smoothies (think of it as a shot of sweetener) or even blitz it for some fresh and creamy vegan ice cream (recipe coming soon). It really is yum, and it doesn’t lose its colour. Go on, don’t let that beautiful brown ‘nana die in the fruit basket.
